Goat Milk Recipes
  with Goat Milk or Goat Milk Products

 

Vegetable Lasagne


A high fiber, low fat, low calorie main dish that can be easily changed with a variety of ingredients.

Freeze or serve hot
Vegetarian or with meat (Chevron)
 Goat Cheese

 

 

Ingredients:

-Oven ready whole grain or whole wheat lasagna noodles.
  Quantity is determined by size of cooking dish and number of layers-


- Prepared *Sauce is composed mainly of vegetables but soy or meat
   can be added in its preparation.

- Layers composed of vegetables, corn, peas, mushrooms, peppers, squash, turnip,
   coleslaw etc.
    Fresh or frozen.

 *Prepared Sauce ( or use your own or bottled)
   frozen or cooked the day before

In a slow cooker
 Add diced onions, garlic in tbsp of canola or Extra Virgin Olive oil
 (unless you have a no stick pot)
 Optional crumbled Soy burger, tofu
 cooked lean ground turkey, or lean chevron

 Cook on high for 1 hour then reduce to low heat
 If adding meat, cook it beforehand, drain any fat and add to the sautéed vegetables

 Add Vegetable puree from juicing (carrots, celery, 1/2 apple)
 Fresh or canned tomato puréed, crushed, diced
 Spices: rosemary, Italian seasoning
 Optional - brown rice (uncooked or precooked)

 Add low sodium vegetable stock or water to achieve desired consistency
 Cook for additional 3-4 hours on low setting.
 Stores for 2 days in refrigerator or freeze in containers for later assembly.

Assembly of Lasagne
 Use cookware sized to fit your toaster oven, conventional oven
 or suited to freezing (now or later)
 Add a thin layer of sauce to the bottom of dish.
 Add layer of oven ready lasagne noodles, do not overlap
 Top this layer with mushroom, pepper, coleslaw, corn,
 or any fresh/frozen diced vegetable
 Add some prepared sauce to cover this layer.
 Add an additional layer of noodles and then
 sauce and added vegetables or soy or cooked ground meat

  Continue this process for as many layers as you wish or that will fit the baking dish.
  Shredded crumbled Low Fat, goat milk or cottage cheese can be added
  to the layers during assembly
  Final layer is noodles with a covering of sauce.

Cooking Time:
 This is totally dependent on the noodles, the filling has already been cooked,
 which normally range from 40 minutes to 1 hour at 425 F
 Left cool for 5 minutes after cooking.
 Serve immediately or freeze in containers after cooling.

Serving Suggestions: As a main course, add soft goat cheese just before serving
    With side dish coleslaw, cooked chicken breasts (if meatless)
     Baked Potato, Potato Wedges
