Quick Pizza
Use leftover
stir fry of sliced mushrooms, red, green or yellow peppers, onions
to add to whole wheat pita.
Quick tasty and balanced meal for lunch or supper.
Heat leftover stir fry or sautéed fresh vegetables. Optional
add cooked chicken pieces or tofu.
Cover the top of the pita with prepared tomato sauce.
Top the pita with the heated veggie mixture.
Microwave on medium for 1 minutes or 4minutes in the toaster oven.
Just before serving add crumbled goat cheese and enjoy.
For lunch as it is; suppers add a side salad or coleslaw and a refreshing
glass of 2% Goat Milk.
Options: replace whole wheat pita with Greek style or mini pitas.
