Warm Goat Cheese Salad with Grilled Apples

This sophisticated presentation is very easy to do.  If desired, substitute Brie or Camembert cheese instead of the goat cheese in this fresh and unusual supper dish.
Preparation Time: 20 minutes
Cooking Time: 15 minutes

Ingredients:

    Dressing:

  • 1 clove Ontario Garlic, minced
  • 1/4 cup (50 mL) black currant jam or beverage concentrate
  • 1/4 cup (50 mL) white wine vinegar
  • 1/2 cup (125 mL) olive oil
  • Salt and pepper

    Salad:

  • 4 Ontario Apples
  • 1 each Ontario Sweet Red and Yellow Pepper
  • 1 Ontario Red Onion, cut in 16 wedges with root end attached
  • 8 oz (250 g) Ontario Goat Cheese, formed into four 1/2-inch (1 cm) thick rounds
  • 1/3 cup (75 mL) chopped fresh chives
  • 1/4 cup (50 mL) toasted sesame seeds*
  • 4 cups (1 L) Ontario Greenhouse Lettuce

Preparation:

Dressing:  In small bowl, combine garlic, jam and vinegar; whisk in olive oil.  Season with salt and pepper to taste.

Salad:  Cut unpeeled apples into 1/2-inch (1 cm) thick rounds and cut out cores; discard cores and end slices.  Cut red and yellow peppers into 6 wedges each and remove seeds.  Brush apples, peppers and onion with some of the dressing.  Grill over medium heat, turning and basting occasionally with dressing, until softened and lightly grill-marked, about 10 minutes.  Set aside and keep warm.  Reserve remaining dressing.

Lightly mark centre line across top of each goat cheese round. Coat one half of top and side with chives and the other half with sesame seeds.  Place on multi-layered foil.  Grill over low heat just until warm, about 5 minutes.

Line 4 dinner plates with lettuce and arrange grilled vegetables on lettuce, leaving centre free.  Drizzle some of the remaining dressing over vegetables and greens.  Place warm goat cheese rounds in centre.  Serve immediately.

* Note:  Toast sesame seeds in dry skillet over medium heat, shaking frequently, for 5 minutes or until fragrant and lightly coloured.

Savoury Apple and Goat Cheese Log

Easy make-ahead appetizers are a life-saver during the busy holiday season. This can be made up to 2 days ahead. Serve with crackers or crostini (toasted baguette slices).

Servings: Makes 1 (8-inch/20 cm) log Serves 10 to 12

Ingredients:

  • 5 oz (140 g) herbed Ontario Goat Cheese, softened
  • 2 oz (60 g) cream cheese, softened
  • 1 Ontario Apple, peeled and coarsely grated
  • 2 Ontario Green Onions, finely chopped
  • 1/2 tsp (2 mL) pepper
  • 3/4 cup (175 mL) toasted pecans or walnuts, chopped

Preparation:

In medium bowl, blend together goat cheese, cream cheese, apple, green onions and pepper until combined. Place on large sheet of waxed paper. Using paper to help, form into 1-1/2-inch (4 cm) diameter log. Refrigerate until firm. Place nuts on plate. Roll log in nuts to cover. Wrap log in waxed paper; refrigerate until firm. (Log can be refrigerated for up to 2 days.)
