Goat cheese has twice the protein, one-third fewer calories and half the fat and cholesterol of regular cream cheese. Plus, goat milk fat globules are smaller than those of cow milk, making the cheese more digestible for many people who have milk-related intolerances'(Canadian Living.com).

Goat's milk cheese, goats' cheese, goat cheese or chèvre (French for goat) is cheese made from Ontario Dairy Goat Milk, in a variety of places in the province. As well Quebec and British Columbia have thriving cheese making using other sources of fresh milk.

The Ontario Ministry of Agriculture, Food and Rural Affairs (OMAFRA) use the Lab Services at the University of Guelph for raw milk testing. Random monthly tests on the milk for every producer includes Standard Plate Count, Somatic Cell Count, Inhibitor and Freezing Point. Milk processors often require additional testing of weekly composition and Somatic Cell count, Coliform and E.Coli Counts on a minimum monthly basis. Further analysis checks for inhibitors such as antibiotics and composition affirming the composition of 100 % goat milk. Producers are encouraged to achieve milk component levels for Milk fats -of 3.5% and protein of 3.0%

The raw milk is then able to enter the dairy on it way to further processing and quality checks. The OGMPA, with the help of Grow Ontario, OFA and private donations completed through independent labs
